Ingredients:
- 1 lb mahi mahi (cut into one inch pieces)
- ¼ cut blackened seasoning (recipe to
follow)
- ½ cup diced tomato
- ½ cut chopped cilantro
- ½ cut shredded lettuce
- Chipotle mayonnaise
- 8 flour or corn tortilla
- Butter
Blacken seasoning:
- 1 tbs. paprika
- 4 tsp. dried thyme
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 2 tsp. salt
- 1 tsp. cayenne pepper
- 1 tsp. black pepper
- 1 tsp. dried oregano
- ¾ tsp. cumin
Heat a 12inch
cast iron skillet on med-high heat. While the pan is heating up, coat
each side of the mahi with the blacken seasoning. Next, put I tablespoon
of butter in the cast iron skillet. The pan should be hot enough where
the butter instantly melts and starts to smoke.
Place the mahi
pieces in the skillet to be cooked. Cook the fish 2-3 minutes on each
side until done. Arrange by starting with tortilla shell, next put around
2-3 oz of mahi. Finally, drizzle with chipotle mayo and top with lettuce,
tomato, onion and cilantro.
